You've been working your way up in the restaurant world for a while. Maybe you even have a little college under your belt on the subject. 1. Cost controls
2. Inventory control
3. Cash control
4. Customer relations
5. Staffing
6. Paperwork
7. Food management
8. Working to schedule
9. Maintaining a perfect image and adherence to standards
10. Providing great customer service
11. Attendance and punctuality
12. Transportation to/from work
13. Store cleanliness
14. Marketing and profitability
